Yes, you can have your cookies and eat them too…..as long as they are HEALTHY breakfast cookies.
I have found this recipe on Oh She Glows and it has been a favorite at my house for a while. Here’s the recipe if you want to try them as well.
All you need is:
- 2 large very ripe bananas
- 2 cups of rolled oats (processed to make a course meal)
- 3 tablespoons of chia seeds
- 1 teaspoon of cinnamon
- jam or nut butter
Cooking Instructions:
- Preheat oven to 350F
- Stir the bananas, chia seeds and cinnamon
- Add the oats to the banana mixture and stir well
- Scoop the mixture out with a spoon and roll into balls (just as you would with any other cookies)
- Place the cookies on parchment paper (my favorite since it doesn’t burn or stick and you don’t need butter or oil)
- Make a thumb imprint on the cookie (so you can put jam or nut butter inside after they are cooked)
- Bake for about 12-13 mins.
- Once baked and cooled add jam or nut butter in the thumbprint and enjoy.
