Hey guys,
So after posting my Gluten Free Breakfast Brownies on my Insta stories I received a lot of requests for the recipe. Unfortunately I didn’t take a lot of pretty photos but still wanted to share them with you so you can start baking asap. 🙂
I took my inspiration from the Oh She Glows app (she has some absolutely amazing recipes, so check her out).
These brownies are vegan, gluten free, and soy free.
All you need is:
3 very ripe bananas
1/2 cup of gluten free flour
3 tablespoons of almond butter
2 tablespoons of cashew butter
5 tablespoons of unsweetened cocoa powder
3 tablespoons of maple syrup
1/2 teaspoon of baking powder
1 teaspoon of chia seeds (optional)
To start, pre-heat oven to 350F and grease a muffin pan (I prefer silicone muffin cups since no oil or butter are needed with those). Add all the above ingredients into a food processor and process until smooth. Then all you do is divide the batter into the muffin cups (fill them half way as they rise) and bake for about 30 minutes.
Once cooked place the muffins on a cooling rack for about 30 minutes to have all the ingredients solidify. However feel free to eat them hot as well, it will just be a little gooey.
Serve them with a bit of icing sugar and berries of your choice. It is delicious and is a favourite with my kids. It is also healthy, nutritious and provides them with all the needed energy in the morning.
