Veggie Burger:
Try this healthy alternative to a regular burger.
. 2 cups of kidney beans
. 1 cup of spelt bread crumbs
. 2 cloves of garlic finely chopped
. 1/2 of onion finely chopped
. 1 sweet potato finely chopped
. 1 carrot finely chopped
. 1 egg
. 1-2 tablespoons of coconut oil
Place the beans in a bowl and use a hand mixer or high power blender to mash them up. Then add the beaten egg and combine with spelt crumbs. Add the garlic, onion, sweet potato, carrots and coconut oil. Form into the desired shape and bake for about 10 minutes on each side at 375F. Chill the mixture for about half an hour be be able to form the burgers better.
Serve in a bun with a salad on the side dressed with oil and vinegar.
Tip: If making these for the kids, arrange the carrots and sweet potatoes on the burger to make a happy face.
